Pie with jam

  •      ½ packs 42 g Kharkiv yeast
  •      flour 500-550 g
  •      butter 30 g
  •      sugar 2 tbsp
  •      eggs 2 pcs
  •      salt ½ tsp
  •      milk 230 g
  •      jam 300 g
  •      vegetable oil 1 tsp

 

Melt butter and cool down.

Dissolve yeast and sugar in a small amount of warm milk, add the remaining warm milk.

Sift and add flour, mix.

Then add melted butter and 1 egg.

Knead the dough (it should not stick to the hands). Cover it with a towel and put aside in a warm place for 3 hours.

During this time it is necessary to knead the dough 2 times.

 

Divide the dough into 2 parts.

Roll out the first piece in size just over the baking sheet.

Grease baking sheet with vegetable oil, sprinkle with flour and place the dough. Cover with jam, preheated to 30°C.

Roll out the second piece of dough and cut into strips, than place the strips over the jam crosswise, decorate to taste.

Leave the pie in a warm place for rising for 15 minutes and turn on the oven to warm up.

Cover the pie with egg.

Put in the oven on the middle shelf, bake at 230-240°C until golden brown (20-25 minutes).

Cool down and cut it into small portions.

Yeast Muffins

Total Time: 2 hrs 12 min

You get: 16 muffins

 

  • ½ of 42g Kharkiv yeast
  • 1 egg
  • 2.5 glasses of flour
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup buttermilk

 

Mix dry ingredients, stir in yeast, buttermilk and egg. Knead the dough. Cover bowl with towel and let sit until ready to use (at least 1 hour). Dough will be very sticky.

 

Scrape out onto well-floured board, flip over and knead lightly (4-6 times). Roll out and create muffins, place them on greased pan and let rise slightly (10-30 minutes).

 

Bake at 200˚C until light brown, 10-12 minutes.

Serve with various fillings - jam, berries, cheese, ham.

Bread kvas (yeast fermented soft drink)

  • rye bread - 1 kg
  • water - 10 l
  • sugar - 500 g
  • Kharkiv yeast - 42 g

In case you prefer sweet drinks you may add 2-3 times more sugar in the end of process (8th step)

 

preparation:

  1. Cut bread into small cubes and dry it in the oven till light brown. The darker the bread, the darker and more bitter is the ready drink.
  2. Boil water and cool it down till room temperature; pour into the vessel for fermentation.
  3. Add dried bread, cover with buttercloth and put aside for 48 hours at room temperature. In case you need to make kvas faster, boil the mixture for 20-30 min and cool it down till 25-30°C. As the result of this step you will get kvas wort (intermediate stage mixture).
  4. Dissolve yeast in water.
  5. Filter the wort through buttercloth and make sure to press dried bread out well.
  6. Pour filtered wort into fermentation vessel, add 400g sugar and dissolved yeast, mix well.
  7. Loosely cover the vessel so that CO2 can pass out freely, and put the vessel aside for 14-16 hours in the warm place at 20°C.
  8. Pour ready drink into bottles or jars, add remaining 100g of sugar, mix. Make sure to put approximately even quantity of sugar into each bottle, because it is required to make the drink sparkling.
  9. Close the bottles tight and put aside for 4-5 hours at room temperature in the dark place.
  10. In order to stop fermentation process put the bottles into the fridge or basement and cool down till 10°C. After 3-4 hours the drink is ready for consumption. Homemade bread kvas can be stored for up to 3 days.

Focaccia

This is Italian flat bread. Serve as a side to any meal or use to make sandwiches.

Unlike pizza, focaccia is usually just brushed with rich olive oil and sprinkled with coarse salt and coarsely chopped herbs as sage, basil and oregano.

 

 

This recipe makes one flat bread (about 35 cm).


  • Yeast 42 g
  • Water 1 glass                                                                            
  • Olive Oil 1 TBSP                                                                     
  • Flour 3 glasses                                                                          
  • Salt 1 tsp                                                                                  
  • Sugar 1 TBSP                                                                           

 

 

Bread machine method

Have liquid ingredients at 28° C and all others at room temperature. Place ingredients in pan in the order listed. Select dough/manual cycle. Do not use the delay. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time. When cycle is complete, remove dough and shape it for baking.

 

Shaping, rising and baking

Turn dough onto a lightly floured surface; punch down to remove air bubbles. Shape into a ball, place on a greased baking sheet. Flatten to a circle (about 35 cm). With a table knife, cut a circle in dough about 3 cm from edge. Using your fingers, poke the surface to dimple the focaccia. Cover; let rise about 15 minutes. Brush with olive oil and sprinkle with desired toppings. Bake in preheated 190° С oven 25 to 30 minutes or until golden brown. Remove from baking sheet to cool. Serve warm or cool.

 

Suggested Focaccia toppings: sun-dried tomatoes, grilled green pepper slices, sautéed onion rings, grated hard cheese and fresh or dried herbs of any combination.

White Rolls

This recipe makes 16-18 rolls, which are ideal to any meal.
 

  • 4 glass Flour
  • 50 g Sugar
  • 50 g Butter
  • 1.5 tsp Salt
  • 1.5 glass Water
  • 42 g Yeast
  • 1 Egg

 

 

In large mixing bowl combine 1.5 glass flour, yeast, sugar and salt; mix well. Add warm water, then egg and butter. Blend at low speed until moistened; beat 3 minutes at medium speed. By hand gradually stir in remaining flour to make a stiff dough. Cover; let rise at warm place until doubled in size, for about 30 minutes.

 

Stir down dough. Put into greased muffin pan cups. Cover; let rise in warm place until doubled, about 20-30 minutes.

 

Bake at 220°C for 10 to 15 minutes until golden brown. Remove rolls from pans and cool down.

Apple Cranberry Bread

A perfect accompaniment for a holiday dinner. 

This recipe makes 1 loaf

 
  • Yeast 42 g
  • Flour 3 glasses
  • Rolled oats 1/2 of glass
  • Sugar 1/4 of glass
  • Salt 1 tsp
  • Allspice 1/2 tsp
  • Water 1/2 of glass
  • Butter 2 TBSP
  • Egg 1
  • Apple, peeled, chopped 1 glass (1 medium apple)     
  • Cranberries fresh, chopped 1 glass                           

 

In mixing bowl, combine yeast, flour - 1.5 glass and next 4 ingredients; mix well. Heat water and butter; add to dry mixture.

Blend at low speed; add egg and beat 3 minutes at medium speed.

 

By hand, stir in apples, cranberries. Gradually stir in remaining flour to make soft dough. Knead on floured surface 5 to 8 minutes. Place in greased bowl, сover; let rise.

 

Punch down dough. On lightly floured surface, roll the dough. Pinch edges to seal. Place in greased bread pan. Cover, let rise. Bake at 200°С for 40-45 minutes. Remove from pan; cool.

Banana Bread

Bananas should be ripe to give rich taste to this bread.

The bread tastes even greater when a day old.

Exceptionally good toasted.

This recipe makes 1 loaf.

 

  •  Yeast  ½ of 42 g packaging
  •  Water  0,5 glass
  •  Oil 3 tbsp
  •  Honey 3 tbsp
  •  Egg 1
  •  Bread Flour  2,5 glasses
  •  Whole Wheat Flour 2/3 glass
  •  Banana (mashed) 2/3 glass
  •  Salt 1 tsp
  •  Vanilla 5 g

Bread machine method.

 

Make sure that all ingredients have room temperature. Put the ingredients in pan as listed above. Select basic cycle and medium crust. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1 tbsp at a time. If it is too wet and sticky, add 1 tbsp of flour at a time. 

 

When cycle is completed, remove from pan; cool on breadbord.

Sally Lunn Recipe for beginners

  • 25 g yeast
  • 100 g warm water
  • 100 g milk
  • 80 g sugar
  • 1⁄2 teaspoon salt
  • 3 eggs
  • 500 g flour

 

Dissolve yeast in warm water in large mixer bowl. Add milk, sugar, salt, eggs, shortening and 100 g of the flour. Whisk on low speed for 30 seconds. Whisk on medium speed for 2 minutes.

Stir in remaining flour until smooth.

 

Make a ball of dough. Cover and let it rise in warm place until it doubled in volume, for 40 to 60 minutes. Then, knead the dough well, make rolls and place them carefully in well-greased pan.

Let the rolls rise for 10 minutes.

 

Heat the oven up to 200°C. Bake the rolls until golden, for about 50 minutes.

Let them cool down for 10 minutes.

Quick and Easy Pizza Crust

 

This is a great recipe when you don't want to wait for the dough to rise.

 

  • 25 g yeast
  • 1 teaspoon sugar
  • 200 g warm water
  • 400 g flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • toppings of your choice

 

Heat oven to 230°C. In a medium bowl dissolve yeast and sugar in warm water. Put the mixture aside for about 10 minutes. Then, stir in flour, salt and oil. Beat until smooth and put aside for 5 minutes.

 

Put the dough on a slightly floured surface and roll it out into round-shaped piece. Place the crust into slightly greased pizza pan or baker's peel dusted with floor.

Cover the crust with desired toppings and bake in preheated oven for 15-20 minutes, or until golden brown.

 

Let baked pizza cool for 5 minutes before serving.

Yeast Waffles

Original recipe makes 6 to 8 servings

 

  • 500g milk;
  • 25g yeast;
  • 130g warm water;
  • 130g butter, melted;
  • 1 teaspoon of salt;
  • 1 teaspoon of sugar;
  • 750g sifted flour;
  • 2 eggs.

Warm the milk in a small saucepan until it bubbles, then remove from heat and cool down. In a small bowl, dissolve yeast in warm water. Let stand for about 10 minutes.

 

Put milk, yeast mixture, butter, salt, sugar and flour in a large bowl. Mix thoroughly with electric mixer until the dough is smooth. Cover and let stand at room temperature for 1 hour.

 

Then stir whisked eggs into the butter; mix well.

Pour mix onto hot waffle iron. Cook until golden brown.
